As the days move into cooler weather, it’s important to eat nutritious meals in order to keep ourselves healthy through the winter months. Here is wonderful chinese broth recipe. Additional vegetables like carrots, leeks, etc., can be added to make it into a hearty meal.
1 pound chicken wings
1 pound pork spare ribs
15 cups water
4 scallions
4 Tbsp soy sauce (make sure it is a good organic fermented type, NOT LaChoy)
1 3″(inch) piece of unpeeled fresh ginger
4 Tbsp Chinese rice wine
The above ingredients can be cut in half if desired. Or you can double the recipe and then freeze containers to have around for quick preparation. You can also add astragalus and garlic and root vegetables (leeks, carrots, etc) as desired.
You will need a heavy cleaver to chop the meat up into little pieces, being sure to cut through the bone. Then throw it in the pan with the water, scallions, soy sauce and ginger and whatever other things you choose to add. Simmer this for a long time. You can throw everything in a big crock pot the night before and then it is done in the morning.
